Rehandling dough toughens cookies, so
press dough back together, do not knead.
Always place cookie dough on a cool cookie sheet. A hot cookie sheet will make
the cookies spread too much.
After baking, remove to racks to stop the baking.
Grease cookie sheets only if the recipe tells you to. Rich cookies will spread
too much if baked on greased sheets.
Cool bar cookies completely in pan before cutting.

Aunt Mary's Oatmeal Cookies
This is one of my favorite cookies. It is thin and crispy.
1/2 C. shortening
2 T. butter
1/2 C. white sugar
1/2 C. brown sugar
Cream these ingredients until fluffy.
Add:
2 eggs
1/2 t. vanilla
2 C. Bisquick
1/2 t. salt
1 t. soda
Mix well until blended.
Add:
1 C. quick oats
3/4 C. nuts
Drop by rounded teaspoon on a greased cookie sheet.
Bake at 350°F. 8-10 minutes until the edges start to lightly brown. Place
cookies on a rack to cool.
