Meadow Muffins
7 1/2 oz. Raisin bran;
(1/2 box, by weight)
1 1/2 cups Sugar
2 1/2
cups
Flour
2 1/2 teaspoons Baking soda
1 teaspoon Salt
2 cups Buttermilk
1/2 cup Butter; melted
2 Eggs
Stir together the dry ingredients to mix well. Add buttermilk, mixing just to
blend and let stand for 20 minutes to soften the cereal.
Add melted butter and
beaten eggs, but don't overmix.
Bake 15-18 minutes at 375° F.
