Pecan Sticky Muffins
2 C. all purpose flour
1 T. baking powder
1 t. ground cinnamon
1/4 t. salt
1 C. milk
1/4 C. vegetable oil
1/2 C. packed brown sugar
1 t. vanilla ext
1/4 C. butter, melted
1/4 C. packed brown sugar
1 C. chopped pecans
In a large bowl, combine flour, baking powder, cinnamon and salt.
In another bowl, beat the eggs, milk, oil, sugar and vanilla until smooth.
Stir into dry ingredients just until moistened.
Into each greased muffin cup, spoon 1 tsp butter, 1 t. brown sugar and 1
heaping T. of pecans. Top each with 1/4 C. of batter.
Bake at 350°F. for 25-30 minutes or until muffins test done. Invert pan onto
piece of foil. Let stand for 2 minutes, remove from pan. Serve warm.
Yield 1 dozen.
