Rhubarb Nut Bread
1 1/2 Cups Brown Sugar
2/3 Cup Oil
1 Egg
1 Cup Sour Milk or Buttermilk
2 1/2 Cups Flour
1/2 Cup Chopped Nuts
1 Teaspoon Soda
1/4 Teaspoon Salt
1 Teaspoon Vanilla
1 1/2 Cups Diced Rhubarb
In a bowl, combine sugar, oil, egg, and the rest of the ingredients. Beat until
well mixed. Sprinkle with topping mixture.
Bake in greased 9x5 loaf pan or 9x13 inch baking pan at 325ºF. for 1 hour. Cool
on rack.
Yield:
