Yogurt Scones
2 C. flour
1/4 C. sugar
1 T. baking powder
1/2 C. (1 stick) margarine
1 egg, beaten
1/2 C. yogurt — any flavor
2 T. melted margarine
Sift together flour, sugar and baking powder; cut in margarine. Mix together
egg, yogurt and melted margarine and add to flour mixture, stirring until just
blended. Turn dough out onto floured surface and knead very gently 8 to 10
strokes. Pat into 8-inch circle and cut into 8 wedges. Place on ungreased cookie
sheet. Sprinkle each wedge with a little granulated sugar; bake at 425 degrees
for 10 to 12 minutes. May serve with honey or preserves. Makes 8 servings.
