Low Fat Italian Oven Fried Chicken
2 boneless, skinless chicken breast
1 c. low-fat ranch style dressing
2 heaping teaspoons of minced garlic
1/2 t. salt
1/4 t. pepper
1 c. Italian bread crumbs
3 T. Parmesan cheese
non-stick cooking spray
Preheat oven to 350.
Mix breadcrumbs and Parmesan cheese
together. Set aside.
Mix low-fat ranch dressing, garlic, salt
& pepper. Mix well. Marinade chicken breast in the dressing mixture. Marinate at
least an afternoon.
Coat pan with a non-stick cooking spray.
Remove chicken from marinade. Coat each piece with bread mixture. Spray both
sides with a non-stick cooking spray. Arrange in pan.
Bake until done 45 min. – 1 hour.
