Orange Cream Fruit Salad
1 (
20-ounce) can pineapple chunks, drained
1 ( 16-ounce) can
sliced peaches, drained
1 ( 11-ounce) can mandarin oranges,
drained
2 apples, peeled and chopped
3
bananas, sliced
1 1/2 cup milk
1 (4-ounce)
package vanilla instant pudding mix
1/3 cup thawed frozen
orange juice concentrate
3/4 cup sour cream
lettuce leaves
Combine the pineapple, peaches, mandarin oranges, apples and bananas in a large
mixing bowl and mix gently. Combine the milk, pudding mix, and orange juice
concentrate in a large mixing bowl. Beat at high speed for 1 to 2 minutes or
until slightly thickened. Add the sour cream. Beat at medium-high speed until
blended. Add to the fruit mixture, stirring gently to mix. Chill, covered, until
serving time. Spoon the fruit mixture onto lettuce-lined salad plates.
