Grilled Spicy Fish
4 red snapper or orange roughy fillets (6 ounces each)
2 tsps paprika
1 tsp salt
1 tsp onion powder
1 tsp garlic powder
tsp cayenne pepper
1/4 tsp white pepper
tsp each dried oregano, basil and thyme
Brush fish with oil. In a small bowl, combine the seasonings; sprinkle over fish
and press into both sides. Cover and refrigerate for 30-60 minutes.
Coat grill rack with nonstick cooking spray before starting
the grill. Grill filets uncovered, over medium heat for 3-4 minutes on each side
or until fish flakes easily with a fork.
