Salmon Potato Pie
1 tablespoon soft margarine
1 1/2 tablespoons all-purpose flour
1 cup 1% milk
3 tablespoons chopped green onion
1 cup flaked, cooked or canned salmon (drained and rinsed)
1 cup frozen peas, thawed
1/4 cup grated light old Cheddar-style cheese
Salt and freshly grated pepper, to taste
For the topping:
2 1/2 cups leftover mashed potatoes ( made from about 4
medium potatoes)
1-per-cent milk, if necessary
1 egg white, beaten
Preheat oven to 400° F.
Melt the margarine over medium heat in a medium saucepan. Stir in the flour and
cook, stirring, for about 1 min. Gradually add milk and continue cooking,
stirring constantly, until the sauce is smooth and thickened, 3-4 minutes Stir
in green onions, salmon peas and cheese; mix gently. Season to taste with salt
and pepper. Spoon into 9-inch pie plate.
Check mashed potatoes for spreadability. If too firm, mix in milk a little at a
time to lighten unmashed potatoes. Spoon over the salmon mixture and, using a
fork, spread evenly to cover. brush with beaten egg white. Bake for 15 minutes
or until heated through. Brown top under broiler for 2 min if necessary.
