2 1/2 pounds chicken
thighs without skin, or skinless chicken pieces
1/4 cup tequila
2 Tablespoons lime juice
1 Tablespoon olive oil, or vegetable oil
1 Tablespoon minced cilantro, or parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
Rinse chicken and pat dry. Prick all over with a fork. In medium bowl, combine
tequila, lime juice, oil, cilantro, salt, and pepper. Add chicken. Turn to coat.
Marinate at room temperature, turning several times, 30 to 60
Prepare hot fire in a grill or preheat broiler. Set chicken
about 6 inches from heat and grill or broil, turning occasionally, until cooked
through with no trace of pink near bone (about 25 minutes).
Diabetic exchanges per serving: 4 1/2 lean meat, 1/2 fat.
