Crab Cakes
2 cups fresh crabmeat
2 cups soft bread
crumbs (4 slices)
1 egg
2/3 cup light
mayonnaise
1/3 cup each chopped celery, green pepper, and
onion
1/2 Tbsp. seafood seasoning
1 Tbsp.
parsley
2 tsp. lemon juice
1/4 tsp. black
pepper
1/2 cup dry bread crumbs
In a large bowl, combine all ingredients. Shape into 8 patties. Broil for 5
minutes each side or until golden brown.
Serves 4 (two crab cakes per serving). 3.75 pts. each
