Greek Pita Steaks
1 cucumber seeded and chopped
1 tomato chopped
3 T. olive oil divided
2 T. red wine vinegar
1/4 t. oregano
1/2 t. basil
1/2 t. salt
pepper to taste
1 medium onion sliced
4 cubed beef steaks
4 pita breads
1 C. shredded lettuce
green olives sliced (optional)
In a small bowl combine, 2 T. olive oil, vinegar, oregano, basil, salt and
pepper. Add the chopped cucumber and tomato to a bowl. Toss to mix.
Preheat oven to 300°F. and wrap pitas in foil. Place in oven to warm.
Saute the onion in the remaining oil until tender but not browned. Remove from
skillet and set aside.
Saute steaks quickly, about 2 minutes on each side. Season with salt and pepper.
Place 1 steak and 1/4 of the onions in each pita. Toss lettuce with the
tomato\cucumber mixture and spoon into the pitas. Serve with the olives.
Serves 4.
