Italian Sausage and Pepper Sandwiches

T. olive oil
2 lbs. link sweet or hot Italian sausages (about 8 links)
2 large onions, thinly sliced
2 large green peppers, cored and slice
2 large red peppers, cored and sliced
pinch of dried red pepper flakes
1 tsp. dried oregano
8 hoagie buns, about 6" long (crusty style)
In a large skillet, heat olive oil. Add sausages and cook on medium heat for 15
minutes or until sausages are cooked through. Stir often. Slice open the buns
and place one sausage with some of the onions and peppers on top. Serve at once.
Serves 8.
