Smoked Pork Sandwiches
1 Tbsp. kosher
salt
1 tsp. dry mustard
1 tsp. ground ginger
1 Tbsp. brown sugar
1 tsp. ground coriander
1/4 tsp. ground cloves
3- to 5-lb. lean pork tenderloin
1 roasted poblano pepper (sliced)
1 roasted red pepper (sliced)
Caramelized onions
6 ounces chicken stock
1-1/2 ounces butter
2 ounces Pick-a-Peppa sauce
Sourdough bread slices
4 ounces smoked mozzarella cheese slices
Mix spices and rub into raw meat. Smoke 2-1/2 hours on the grill. (Apple chips
are recommended for smoking.)
Slice meat and brown in canola oil. Add peppers, then onions. Add chicken stock.
Add butter. Add Pick-a-Peppa sauce. Mix well and cook 5 minutes.
Place mixture over sourdough bread slices. (Bread slices can be brushed with
garlic oil, if desired.) Top with smoked mozzarella. Heat in oven until cheese
melts.
