Have you ever wondered why it is so hard at home to cook steaks like the pros? They cook at much higher temperatures, as high as 800°F., well beyond the capabilities of home grills. High heat is the secret to searing the outside of the steak, so get your home grill as hot as possible.

Steak with Onion and Peppers on Pita Bread

1 - 1 1/2 lbs. flank steak

2 red peppers sliced in strips

2 onions sliced in strips

Marinade:

1 C. olive oil

1/3 C. red wine vinegar

1/3 C. soy sauce

6 garlic cloves chopped

1 t. basil

1/2 t. oregano

1 t. paprika

1 t. cumin

freshly ground black pepper

Mix marinade ingredients in a bowl. Marinate steak for 6 - 24 hours. Drain steak and discard marinade. Grill steak for 18 minutes or until desired doneness. Let set for 5 minutes before slicing into thin slices.

While steak is grilling, put vegetables on a grill tray and spray with vegetable oil. Cook for 15 minutes on grill or until tender.

Grill the pita bread a few minutes to warm. Split open and fill pocket with the steak and vegetables. Have mayonnaise and mustard on the side.

Serves 4 - 6.
