Greens and Ham Hocks
2 ham hocks
1 1/2 qts. water
1 t. crushed red pepper
1 chopped onion
4 lbs. fresh collard greens
1 t. sugar
Place ham hocks in a Dutch oven. Add water, red pepper, salt and onion. Cook
until ham hocks are tender.
Break stems off greens. Wash leaves thoroughly. Slice leaves into bite size
pieces. Add greens and sugar to the ham hocks. Cook for about 40 minutes or
until greens are done. Add more water if necessary.
Serves 8.
