When buying green beans, check for freshness by breaking one in half. It should snap and taste flavorful, with a hint of sweetness. Don’t buy beans that are dull and flat-tasting, wilted, puckery, or limp.

Pole Beans

2 lbs. fresh pole beans

1/4 lb. country side bacon

1 1/2 quarts water

1/2 t. sugar

1 t. salt

Place the bacon in a pot with the water and cook for 1/2 hour.

Wash the beans, remove the ends and strings. Break into 2 inch pieces. Add them to the pot with the sugar and the salt.

Bring the pot to a boil, reduce the heat to low and cook the beans slowly, stirring often, for about 40 minutes. Add hot water if needed.
