Spring Pea Salad
10 oz. Fresh or Frozen Peas
1 cup Celery, diced
1 cup Cauliflower, chopped
1/4 cup Green or Spring Onion, thinly sliced
2 Tbs. Pimiento, chopped
1 cup Cashews, chopped
1/4 cup cooked Bacon, crumbled
1/2 cup Sour Cream
1 cup prepared Ranch Salad Dressing
1/2 tsp. Dijon Mustard
1 small clove Garlic, minced
Rinse the fresh or frozen peas in hot water and drain thoroughly.
In a large mixing bowl, combine the peas with the celery, cauliflower, green
onion, pimiento, cashews, and bacon. Mix in the sour cream.
In a separate mixing bowl, whisk together the Ranch salad dressing, Dijon
mustard, and garlic.
Pour the mixture over the vegetables and toss gently to blend.
Refrigerate until serving time.
Serves 6 to 8
