Grades of Beef

Prime is the highest grade of beef. It is produced in smaller quantities than the other grades and most of it goes to top restaurants and hotels.

Choice is what we mostly find at our supermarkets. It is the most popular grade for overall consumption.

Select is a step lower and makes up the rest of the supermarket selection. It may be sold under a house name.

 

Cajun Burgers

1 lb. ground beef

4 T. ground dry bread crumbs

3 green onions chopped

1 egg

1 T. + 1 t. Cajun seasoning

4 slices cheddar cheese

1/4 C. barbeque sauce

hamburger buns

In a medium bowl, combine ground beef, bread crumbs, egg, green onions and 1 T. Cajun seasoning. Form into 4 patties.

In a separate bowl combine the barbeque sauce and the 1 t. Cajun seasoning. Mix well and set aside.

Grill the patties until the desired doneness, 11 - 13 minutes. Top with the cheese. Serve with the barbeque sauce. (You can lightly brush it on both sides of the burger before putting on the cheese.)
