ah-DOH-boh Of Mexican origin,
this dark-red, rather piquant sauce (or paste) is made from ground
chilies, herbs and vinegar. It's used as a marinade as well as a serving
sauce. Chipotle chilies are often marketed packed in adobo sauce. |

Spicy Chipotle Burgers
1/2 C. diced onion
2 T. oil
1 T. adobo sauce
1 chipotle chili pepper seeded and finely chopped
1 1/2 lbs. ground beef or ground pork
1 egg
2 T. dried bread crumbs
2 T. chopped fresh parsley
pinch of sugar
1/2 t. salt
In a small saucepan over medium heat saute onions in the oil. Cook until
softened, about 4 minutes. Set aside.
In a large bowl, combine cooled onions, ground beef, adobo sauce, chipotle
pepper, egg, bread crumbs, parsley, salt and sugar. Mix together thoroughly.
Form the meat mixture into 6 burgers. Heat a large saucepan and add a little
oil. Add burgers and cook until desired doneness.
Serve the burgers with diced avocados and if desired sour cream.
