In making ice cream it pays to
only use the freshest ingredients. If you compromise on quality, you'll
be able to taste it.
If making a fruit ice cream and fresh fruit is unavailable, substitute
quick-frozen fruit. Drain off all the sugar syrup.
Nuts should be unsalted. Plump dried fruits in hot water before using. |

Peanut Buster Parfait
1/2 C. butter melted
1 package Oreo cookies
half gallon vanilla ice cream
1 C. salted peanuts
1/2 C. margarine
2 C. powdered sugar
1 can evaporated milk
1 C. chocolate chips
Melt 1/2 cup butter. Crush package of Oreos and put in bottom of 9 x 13 pan. Mix
the butter in. Put in the freezer for 1 hour.
Soften ice cream in the refrigerator. Spread evenly on top of crust. Freeze
overnight.
In a saucepan, mix margarine, powdered sugar and milk. Bring to a boil and cook
for 3 -4 minutes. Mixture should thicken some. Remove from heat and stir in
chocolate chips. Stir until chocolate chips melt. Cool to room temperature. Pour
over top of ice cream. Sprinkle with nuts. Return to freezer until ready to
serve.
