For a picnic or tailgate party, pack
this in a zipped freezer bag. Either take a bowl or dish up right out of the
bag. Take prepackaged salad mix and serve the beef salad on a plate or how about
as a filling for sub buns.
Grecian Style Beef Salad
2 lbs. cooked roast beef, slivered
1 green pepper cut in strips
1 red pepper cut in strips
1 red onion sliced
2 C. ripe olives sliced
1 C. green olives sliced
8 oz. feta cheese crumbled
2 6 oz. jars marinated artichoke hearts drained, diced and reserve liquid
1 C. fresh minced parsley
olive oil + liquid (reserved) to make 2/3 Cup
1/3 C. red wine vinegar
2 cloves garlic minced
1 t. basil
1 t. oregano
1/2 t. tarragon
salt and pepper to taste
In a large bowl, combine beef strips, peppers, olives, feta cheese, artichokes
Mix dressing ingredients and mix well. Pour over salad and let set overnight.
Serves 6 - 8.
