Baked Crabmeat Spread
2 tablespoons
butter
2 tablespoons green onion -- sliced
2 tablespoons flour
1 cup milk
1/2 cup cooked crabmeat
1 clove garlic -- minced
1/4 teaspoon white pepper
1/4 cup Parmesan cheese
1/4 cup shredded cheddar cheese
Heat oven to 350ºF. Grease 9" pie pan.
Melt butter in skillet over medium heat. Add onion and
garlic, cook until tender. Stir in flour and pepper, cook 1 minute.
Gradually add milk; cook until boils, stirring constantly.
Stir in Parmesan cheese and remove from heat. Fold in crab.
Pour into prepared pan and then sprinkle with cheddar.
Bake for 10-15 minutes or until thoroughly heated and cheese
is melted. Serve with melba rounds or french bread.
