Fire Triangles
1 lb. lean ground beef, turkey or chicken
1 onion, chopped
1/4 C. hot pepper sauce
1 15 oz. can refried beans
1 15 oz. can stewed tomatoes
1 15 oz. can kidney beans, drained and rinsed
1 15 oz. can tomato sauce
1 7 oz. can tomato paste
4 1/2 C. buttermilk baking mix
1 1/3 cups milk
1 8 oz. package Monterey Jack cheese, shredded
1 16 oz. container sour cream
Chopped chives (optional)
Heat oven to 450°F. Brown meat with chopped onion in large saucepan. Drain
excess fat. Combine hot pepper sauce, refried beans, stewed tomatoes, kidney
beans, tomato sauce and tomato paste. Mix well.
Place over medium-high heat; reduce heat and simmer 15-20 minutes.
Combine buttermilk baking mix with milk in bowl. Knead dough. Using rolling pin,
flatten dough to about 1/4 inch thickness. Cut into 6 x 6 inch squares. Place
squares on large baking sheet.
Place 1 tablespoon of meat mixture diagonally across each square. Sprinkle with
cheese. Fold square into triangle. Keep meat mixture within dough. Using fork,
seal two open sides of triangle.
Bake in preheated oven for 8-12 minutes or until golden brown. Top with sour
cream and chives, if desired.
Makes 8 servings.
Note: Shredded lettuce, chopped tomatoes, salsa and sliced olives also may be
added.
