* When mincing garlic, sprinkle on a
little salt so the pieces won't stick to your knife or cutting board.
* If a recipe calls for 1 cup sour cream, you may substitute 1 cup cottage
cheese blended until smooth with 1 tablespoon lemon juice and 1/3 cup
buttermilk. |

Hot Beef Spread
1 jar of dried beef
1/2 C. onion chopped fine
1 T. butter
8 oz. cream cheese
8 oz. sour cream
1/2 C. mayonnaise
2 T. milk
1/2 C. pecans chopped
Saute onions in butter until tender. Add sour cream, cream cheese, mayonnaise
and milk. Stir together until it is smooth. Tear the beef into pieces. Add to
the cream mixture. Spoon mixture into a casserole dish. Top with pecans. Bake at
350° F. for 15 - 20 minutes.
Serve with crackers.
