Easy Meat and Cheese Stacks
3 ounces
cream cheese, softened
1 Tablespoon dijon mustard
1 Tablespoon grated onion
1 variety pack of assorted lunch meat (the kind that comes with 4 slices of 4
different kinds of meat - get one with all 4 the same shape, either all round or
all square)
12 slices of processed cheese, any flavor or combination of flavors (4 each of 3
different flavors works well)
a pile of toothpicks
Mix the cream cheese, mustard and onion in a small bowl.
Open the meat and separate the meats into the 4 different kinds. Now comes the
stacking part. This is easiest if you do it like an assembly line.
Take your first flavor of meat and lay the 4 slices out on the cutting board
individually like you are dealing cards.
Spread each slice with a little of the cream cheese, then add a slice of cheese,
then a little more cream cheese.
Then put your second flavor of meat on top of each stack, spread with cream
cheese, a slice of cheese, cream cheese.
The third flavor of meat, cream cheese, slice of cheese, cream cheese and fourth
kind of meat.
You should end up with 4 identical stacks of 1 slice of each meat and 3 slices
of cheese stuck together with cream cheese. Cut each stack into about 1 inch
squares (bite size) and put a toothpick down through the middle to keep it
together. You should be able to get about 16 squares from each stack. It really
is easier than it sounds and they are very good. Can be made ahead.
