Asian Beef Pot Roast
3- to 4-pound beef brisket or chuck roast
1 tablespoon vegetable oil
1/3 cup soy sauce
1-inch cube fresh ginger, peeled and sliced
4 pieces star anise
2 cups water
3 cups cubed and peeled rutabaga or white turnip
1/2 cup minced green onions
In a large Dutch oven, brown the meat in the oil until seared on all sides.
Combine soy sauce, ginger and star anise with water.
Pour over the meat.
Simmer for about 3 hours, turning once or twice and adding more water if

Cover and cook for another 30 minutes.
Garnish with the green onions, and serve with white rice or mashed potatoes.
