BEEF
1 Tablespoon olive or vegetable oil
1 1/2 Teaspoons finely chopped fresh garlic
1 Pound beef sirloin -- cut into 1/2-inch
strips
2 Teaspoons chili powder
1 green pepper -- cut into 2x1/2-inch
strips
4 Ounces chopped green chilies
Cook fettuccine according to package directions. Rinse with hot water; drain.
Set aside. Meanwhile, in 10-inch skillet heat oil; stir in garlic. Cook over
medium high heat, stirring constantly, 30 seconds. Stir in beef and chili
powder. Continue cooking, stirring occasionally, until beef is lightly browned
(5 to 7 minutes). Stir in all remaining ingredients. Continue cooking, stirring
occasionally, until peppers are heated through (3 to 5 minutes). Stir in cooked
fettuccine; toss gently. Season to taste with salt and pepper. YIELD: 4
servings.
