Here is an easy dinner for one of those
nights you don't feel like cooking. Better yet, let the kids make this one!
Just add a salad and dinner is ready.
1 lb. ground beef
1 small onion diced
4 - 6 potatoes diced
1 can creamed corn
1 C. cheddar cheese shredded
salt and pepper to taste
Cook potatoes in boiling water until tender. Drain and mash potatoes. Do not add
milk. Salt and pepper potatoes.
Saute beef and onion in a skillet until brown. Salt and pepper to taste. Place
in the bottom of a casserole dish. Spread the canned corn on top. Spoon potatoes
on top of corn. Top with cheese and a little butter.
Bake at 350°F. for 30 minutes, or until the peaks of the potatoes are brown and
the cheese has melted.
