The Herb Garden

Cooking with fresh herbs has become a essential part of my cooking style.

Herbs are fun to grow and you don't need a big garden. I keep a straw- berry pot filled with herbs on my deck and move it inside for the winter.

I grow thyme, sage, basil, oregano, parsley and rosemary in my pot.

I also grow a few herbs in the garden and pick them in the fall to dry. Try growing a few for yourself and you'll taste the difference.

 

Beef Hash

2 1/2 C. boiled potatoes

1 1/2 C. diced leftover roast beef

1/2 medium onion chopped

1/2 green pepper chopped

1/4 t. pepper

1/4 t. salt

1/2 t. thyme

Combine all ingredients above in a bowl. Toss to blend well. Heat 1 1/2 T. oil in a pan. Add potato mixture and flatten with a spatula. Cover and cook until bottom starts to turn brown (about 5 minutes). Turn hash over and leave uncovered and continue to cook until vegetables are tender and hash has bits of browned potatoes thru it (about 10 minutes).
