Cajun Meat Loaf
2 tablespoons butter
1/2 large onion, chopped
1/2 cup chopped green bell pepper
1 teaspoon salt
3/4 teaspoon cayenne pepper
1/2 teaspoon dried thyme, crumbled
1/2 teaspoon freshly ground pepper
1/4 teaspoon ground cumin
1 pound lean ground beef
1 egg, beaten to blend
1/2 cup fine dry bread crumbs
1/2 cup ketchup, divided use
1 teaspoon Worcestershire sauce
Preheat oven to 375 degrees. Melt butter in heavy skillet over medium-low heat.
Add onion, bell pepper, salt, cayenne pepper, thyme, pepper and cumin. Cook
until vegetables are tender, stirring frequently, about 10 minutes.
Combine ground beef, egg, bread crumbs, 1/4 cup ketchup and Worcestershire sauce
in medium bowl. Blend in sautéed vegetables. Form mixture into loaf 13/4 inches
high and 5 inches wide in baking dish. Bake 20 minutes. Spread top with 1/4 cup
ketchup and bake for 40 more minutes. Makes 4 servings.
