While I was designing this site, I
showed it to my sister. When she got to this section and finished reading it,
she wanted to know where the chipped beef recipe was. So Beth, here's your
recipe.
This is easy and quick. Dried beef is a staple in my pantry. It is a great dish
for one of those nights when you're too tired to cook but would like some- thing
hot and comforting. |

Chipped Beef
4 T. butter
4 T. flour
1/2 t. salt
pepper
2 C. milk
1 jar of sliced dried beef (2.25 oz)
Melt butter in a saucepan. Add flour and stir. Cook until bubbly and smooth.
Slowly whisk in milk and cook until to just below a boil. Tear beef into pieces
and add to sauce. Cook 1 minute more.
Serve over toast or biscuits.
Serves 3-4.
