Preheat oven to 350 degrees. Saute chopped mushrooms and onion in the butter
over medium heat until the onion is soft, about 5 minutes. Add the cooked
mixture to the remaining ingredients, reserving 1/4 cup of the cheese for the
top. Mix together and press into a 9- by 5-inch loaf pan. Sprinkle the top with
reserved cheese.
Bake meatloaf for an hour. Let rest for about 10 minutes, slice and serve with a
dollop of sour cream.
