1 lb ground beef
1 lb ground sausage (or two pounds ground beef)
1 1/2 c. oatmeal
1 c shredded carrots
1 large onion, diced
1 green pepper, diced
1 can Rotel (or diced tomatoes with chilies or green peppers)
2 eggs
1 T. oregano salt
and pepper garlic powder (or fresh, minced garlic) optional V-8 or tomato juice
as needed
I put everything except the juice or V-8 in a large bowl, take off my rings and
just squish it all around until it is fully mixed. Add juice as needed. Shape as
a rectangle on a smooth surface (I use a linen-like dish towel, clean of
course!) It should be 9x12" and 3/4" thick. Spread grated cheddar cheese over
the surface then roll the meat like a jelly roll. Place it in a roasting pan and
bake @ 350°F until done. (about 1 1/2 hours). In the mean time, make mashed
potatoes for 8. When the meatloaf is finished, spread the mashed potatoes like
icing a cake. Put pats of butter over the potatoes. Insert under the broiler for
5-7 minutes until the potatoes have a nice browning color and the butter is
melted. Lifting it to a serving platter is the most difficult part. You don't
want it to fall apart.
