Porcupine Beef Casserole
1/4 C. chopped onion
1/4 C. chopped green pepper
1/2 C. uncooked rice
1 1/4 lbs. ground beef
1/2 t. salt (or more, to taste)
1/4 t. pepper
1 (14.5-oz.) can diced tomatoes
1 (10-oz.) can diced tomatoes and green chilies
Brown the onions, green pepper and ground beef. If necessary, spoon off excess
fat.
Add the uncooked rice, salt, pepper and tomatoes, and mix thoroughly. Let the
mixture come to a boil.
Place mixture in a greased 3-quart casserole dish. Cover and bake about 1 hour
at 350 degrees.
Serves 6.
