1 cup long-grain rice
2 cups chicken broth
1 clove garlic -- crushed
1/2 cup frozen mixed vegetables -- thawed and drained
1/4 cup red onion -- finely chopped
Place chicken broth, garlic, mixed vegetables, and red onion in a medium sauce
pan. Bring to a boil. Stir in rice. Cover and reduce heat to a low simmer. Cook
covered for 20 minutes.
