3 tablespoons fresh or 2 tablespoons dried rosemary
1 teaspoon salt
1 1/2 tablespoons coarsely ground pepper
2 tablespoons olive oil
1 bone-in pork loin roast (about 5 pounds)
Preheat oven to 350 degrees.
In food processor, combine garlic, rosemary, salt, pepper and olive oil; puree.
Use a small, sharp knife to cut through pork (at least 3 slits per rib). Spoon
some of the puree into each slit.
Place pork bone side down on roasting pan. Roast about 17 minutes per pound
(about 11/2 hours total) until thermometer inserted in thickest part of meat
reads 160 degrees F.
Remove pork from oven and let rest about 10 minutes before slicing. Serve hot or
cold.
