Pork Chops with Corn Dressing
2 eggs, beaten
2 cans cream style corn (15 oz size)
1/4 cup butter, melted
1/3 cup celery, chopped
2 tablespoons pimiento, chopped
4 slices white bread, cubed
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
4 pork chops, 1" thick -- (4 to 6)
In a mixing bowl, combine eggs, corn, butter, celery, pimiento, bread cubes
paprika, salt and pepper. Spoon into a greased 13x9x2-inch baking dish.
Arrange pork chops over dressing. Sprinkle with additional paprika and salt.
Cover and bake at 350ºF for 30 minutes. Uncover and bake 30 minutes longer or
until chops are done.
