your own recipe. |

Herb-Crusted Roast Pork Tenderloin
1 pound pork tenderloin, trimmed
1 tablespoon butter
1 tablespoon olive oil
Herb and garlic rub (see below)
1 pound purchased potato gnocchi or 8 ounces dried gnocchi pasta
Preheat oven to 350 degrees.
Rub the pork roast with herb and garlic rub. Brown pork tenderloin in a hot
saute pan with butter and olive oil; then remove and let rest.
Place on rack and roast at 350 degrees allowing air to vent underneath for 20-25
minutes.
Roast to 155 degrees. Pull out of oven.
Let rest prior to slicing about 10 minutes.
Slice and place on top of gnocchi.
Serves 4.
Herb and Garlic Rub
1 bunch (or 1 cup) parsley, minced
1/2 tablespoon fresh thyme, minced
1/2 tablespoon garlic, minced
1/2 tablespoon rosemary, minced
Mix all ingredients together.
