My Aunt Barbie makes this dish every
holiday for 60 to 100 people.
Aunt Barbie and Uncle Bob first gave me a start in the food industry. They owned
a restaurant and I started working for them at age 14. They serve the best chili
dog in the state of Michigan. Uncle Bob had a couple of slogans "hot food hot
and cold foods cold" and "make it as if you were going to eat it". My cousin,
Mollie and I served the best banana splits in town until Uncle Bob saw them one
day. I guess we took it to literal. |

Aunt Barbie's Rice Pilaf
1 1/2 C. Uncle Ben's converted rice
3 T. butter
vermicelli (about 70 pieces or the thickness of your thumb around)
3 1/3 C. chicken broth (can be part water)
salt
Brown rice and vermicelli in a 5 qt. pan, until golden brown. Add chicken stock
and salt to taste. Cover and simmer for 20-25 minutes.
Serves 6.
