Stockman Cafe Pancakes
This recipe came with the cafe.
Breakfast begins at 5:30 A.M. and we serve a lot of these pancakes.
4 cups flour
1 tablespoon salt
1 tablespoon soda
2 tablespoons Baking powder
1/4 cup sugar
1/4 cup cooking oil
1 quart butter milk
4 eggs
Beat with electric mixer.
This keeps for the next day but after that the batter starts to break
down.
Alligator Stew
5 # Hamburger
1 large onion
2 large green peppers
2 1/2 cups ketchup
2 1/2 cups water
1 cup brown sugar
1 gallon pork & beans
Brown hamburger & onions.
Season to taste.
Then drain fat off.
Add ketchup, water, brown sugar and beans, green peppers.
Cook until peppers are tender.
For a home size to try
Use 1 # hamburger
1/4 cup onion
1/4 cup chopped green pepper
1/2 cup ketchup
1/2 cup water
1/2 cup brown sugar
1 15 0z can of pork and beans
Onion Chuck Steak
Boneless chuck steak I usually have the meat market cut me 8 oz
serving
and do 24 steaks This will make a steam table pan full
Onion soup mix 2 packages.
Sliced mushrooms
Dredge steaks in flour with salt & pepper
Brown on grill
Gravy from cafe which is beef broth from beef roast, beef stock and
chicken stock .Thickened with corn starch.
Using onion soup mix and gravy,
Smother steaks in.
Add sliced mushrooms, use the juice
Cover with foil and bake, about 1 hour at 350
I make this on Monday for Tuesday and I use the gravy that is left from dinner.
Swiss Steak Sauce
2 cups ketchup
2 cups tomato juice 1 cup water or wine (I use wine, my mother makes
gallons of it)
2 Tablespoons Worcestershire sauce
2 Tablespoons Heinz 57 sauce
1/4 cup brown sugar
Pour over browned steaks and sprinkle with shredded carrots, chopped celery,
sliced thin green pepper rings and onions.
Cover with foil and bake 1 hour on 350°F.
I never measure and I try to do this when I have green peppers and onions from
the garden. The best wine I have used is homemade onion and potato wine. It is
one of mothers things she does well.
Football Stew
Here in Nebraska we are Big Red Husker fans.
2 # hamburger, browned with chopped
onions, drain off fat
In a large kettle place the following ingredients:
2 cans of chopped tomatoes
4 carrots peeled and sliced in chunks
1/2 head cabbag4 cups water
Salt & pepper to taste
3 Tablespoons rice ( I use instant)
2 cans of kidney beans (add after other vegetables are tender)
Add hamburger and simmer and eat.
This will make you think it is a vegetable chili minus the chili powder
This should work in a large crock pot for when you are watching a football game
and won't want to cook. I always say you can watch the game and I will stay in
the kitchen and cook.
I make a large batch of soup or stew each day during the soup season. They like
anything with meat and vegetables in it.
