The ancestors of the Skelton family
have been ranching in the Oklahoma Panhandle since 1883. The Skelton family name

The natural beef animals are born on the Skelton Ranches and raised by their
mothers. They graze on native grasses, breathe clean air, and drink pure well
water. Skelton's Natural Beef animals are never given steroids, antibiotic, or
animal by-products.
When the natural beef animals are feeder weight, they are brought to the home
place and gradually introduced to a feed ration made-up of locally grown grains,
alfalfa, and plant based protein. For 120 days, the natural beef animals are
hand-fed twice daily. Skelton's Natural Beef is processed in a federally
inspected plant, aged for tenderness, individually packaged, double wrapped to
protect against freezer burn, frozen, boxed, and USDA inspected. |

Beef and Vegi Stir Fry
1 lb. tenderized round steak - partially frozen
1 tomato
1 bell pepper
1 onion
1 carrot
1 lemon
1/2 C. broccoli pieces
1/2 C. cauliflower pieces
1/4 t. cayenne pepper
1/4 t. ground ginger
3 T. soy sauce
3 T. olive oil
salt and pepper
Cut partially frozen round steak into 1/4 inch strips and marinate in the
refrigerator for 10 minutes in soy sauce, ginger, cayenne pepper, salt and
pepper.
While beef strips are marinating, julienne vegetables.
Place half of the oil in a wok or large skillet and allow to get very hot. (400
to 425 degrees) Place vegetables (except tomato and lemon) in the hot skillet
and stir fry for 2 - 3 minutes. Remove from skillet and set aside.
Add remaining oil to skillet and reheat. Stir fry marinated beef until brown. Do
not overcook. Add cooked vegetables and tomato to beef. Salt and pepper to
taste. Squeeze a lemon over mixture.
This recipe takes about 15 minutes to prepare and will serve 4. Beef and Vegi
Stir Fry is pleasing to the eye, nutritious and tasty.
