These "haystacks" are very tasty and
quick to prepare. At OXO Hereford Ranches, we especially enjoy our registered
Hereford cattle and all types of beef dishes. Originally located in Illinois,
our farm outgrew the suburbs of Chicago and we moved all our cattle to the
majestic Uncompahgre mountains of southwestern Colorado in the 60's. Take a

Cubed Steak Haystacks
1 pkg. Betty Crocker hash browns with onions
6 beef cubed steaks
2 Tbsp. shortening
1/2 tsp. salt
1/4 cup catsup
1 (8 oz) pkg. shredded Cheddar cheese
3 English muffins, split, toasted and buttered
Prepare potatoes as directed on package until lightly crispy. In large skillet
over medium heat, brown steaks in hot cooking fat 3-5 minutes on each side.
Remove from heat; sprinkle with salt. Spread each with 2 teaspoons catsup. Top
each with 1/2 cup potatoes and 3 tablespoons of cheese. Place each "haystack"
on 1/2 English muffin. Cover and cook over low heat 2 to 3 minutes or until
cheese is melted. Makes 6 servings.
