The calves must be born with vigor and grow well on the dam. They must stay healthy and work well in the feed lot. Most importantly, the consumer must be pleased with their eating experience. All traits must be balanced to the best compromise for all. Constant testing and selection is the only way to achieve this balance in the end product.
