3C Cattle Co was founded in 1996 by Ronald A. Cox and his wife Roper in Armstrong County Texas. Built on a dream and a prayer 3C has more than tripled in size in just less than a year, with operations not only in Armstrong County, but Hutchinson, Roberts and Carson Counties.

 

Beef and Cheese Green Chili Casserole

1 lb. of browned and seasoned ground beef

corn tortillas

grated cheese

1 - 2 cans of Old El Paso green chili enchilada sauce

1 small chopped onion

small can of green chilies optional for extra kick, mixed in the sauce

Pour a little sauce in the bottom of oven safe casserole dish. Add a layer of corn tortillas, then beef, cheese and enchilada sauce. Repeat layers until the beef and cheese are gone, ending with lots of cheese on top.

Bake at 350°F. until cheese is bubbly.

If you are in a huge hurry, you can microwave. Serve with sour cream, hot sauce, guacamole garnishes with a side of chili beans and a salad.
