Wild Beef Burgers
1 lb. ground beef*
1 C. cooked cultivated wild rice,
cooled
1/4 t. salt
In a large bowl, combine all
ingredients. Mix well to evenly
distribute cooked wild rice. Shape into 5
patties. Broil, grill or fry to medium doneness (160 degrees) or until the
center is no longer pink and the juices are clear, not pink. Do not overcook.
Serve with your favorite condiments.
Note: To cook wild rice, bring
3/4 C. water to a boil in a medium saucepan. Stir in 1/4 C. wild rice. Cover and
simmer for 40 - 45 minutes or until rice is tender and grains start to split and
curl.
Variations: Add your favorite
seasonings to ground beef/wild rice mixture - chopped onion, parsley, basil,
garlic, seasoned salt or lemon pepper. Melt slice of cheese over grilled burger
for a gourmet cheeseburger. Use ground beef/wild rice mixture as a base for
meatballs or meatloaf.
For convenience, recipe can
easily be doubled or tripled and frozen in patties.
*The addition of wild rice is
particularly appropriate for ground beef that is low in fat content because of
the wild rice's ability to hold moisture normally lost in cooking.
