Blueberries
Wash and stem berries before using. Pat dry on paper toweling.
1 pint of berries from the supermarket = 2 Cups of berries before washing.
When using frozen berries in muffins and quick breads do not thaw first. They
loose their shape and turn the batter purple.

Blueberry Spinach Salad
1 lb. washed fresh spinach torn into bite size pieces
1 C. fresh blueberries
4 oz. blue cheese crumbled
1/2 C. toasted pecans
Dressing:
3 T. blueberry vinegar
1/2 C. olive oil
1 t. Dijon mustard
1 t. sugar
Mix dressing ingredients. Set aside. Combine salad ingredients in a pretty bowl.
Toss with salad dressing at time of serving.
