Did you know that if you want really
crisp cabbage salads you should shred the cabbage and then immerse it in ice
water for a hour. Blot dry with a paper towel. |

Oriental Broccoli Salad
1 C. salad oil
1/2 C. sugar
1/3 C. white vinegar
2 flavor packets from ramen noodles
3 packages ramen noodles, Oriental flavor
1 package broccoli slaw
1 C. shredded red cabbage
1/2 C. sliced scallion
1 C. sliced toasted almonds
Make dressing by whisking together oil, sugar, vinegar and flavor packets from 2
packages of ramen noodles. (Discard third flavor packet; using all three would
make salad too salty.) Set aside.
To make the salad, in a large bowl, place the 3 packages of ramen noodles in
warm water to soften, then drain well. Add the broccoli slaw, cabbage and
scallion. Pour dressing over the salad. Refrigerate overnight. Just before
serving, toss with the almonds.
