Here are a Few Tips for Buying
Vegetables
Beans: Should be smooth and green, free of blemish. Medium sized beans are the
best.
Cabbage: Heads should be solid, hard and heavy for their size. Avoid ones which
are affected by worm injury and decay or are burst from any point. The leaves
shouldn't be yellow.
Cauliflower: Wholesome white color, heavy and compact florettes and fresh leaves
are indicative of good quality.
Carrots: Should be firm, clean, fresh in appearance. They should also be smooth,
well shaped and of good color.
Corn: Cobs should be filled with bright, plump, soft and milky kernels. They
shouldn't be too soft. Husk should be fresh and green.
Cucumbers: Should be firm, bright, well shaped, of good color. Avoid withered
cucumbers which are rubbery and bitter. |

Cucumber Salad
2 large cucumbers
1/2 C. sour cream
1/2 C. mayonnaise
1 T. cider vinegar
1 T. sugar
1 t. salt
1/2 t. freshly ground black pepper
1/4 C. fresh dill chopped (optional)
Peel the cucumbers. Cut in half lengthwise, remove seeds and slice into thin
slices. Sprinkle with salt and let set for 10 minutes in a strainer.
Add the remaining ingredients to a bowl to make your dressing. Add the cucumbers
and toss cucumbers to blend in the dressing.
Chill until ready to serve.
