Dutch Potato Salad
8 ounces finely diced cooked lean pork, cold
2 cooked red beets, fresh or canned
5 small dill pickles
10 pickled onions
1 head of lettuce
5 hard boiled eggs
mayonnaise to taste
pepper and salt to taste
Peel and boil potatoes in salted boiling water until tender. Mash potatoes with
finely chopped pork
Peel, core and finely chop the apple, add to potatoes.
Finely chop beets, pickles and onions, add to potatoes.
Wash lettuce and shred, add to potatoes.
Mash 3 hard boiled eggs, add to potatoes.
Slice the 2 other eggs. Add the mayonnaise, salt and pepper to taste.
Place salad in serving bowl and decorate with sliced eggs, catsup and parsley.
